Outnumbered Mom

It's time for some family-friendly recipes!

Here's my first offering.

Porcupine Meatballs

1 c. Minute Rice, 1 lb. ground beef, 1 egg slightly beaten, 2 tsp. grated onion, 2 tsp. salt, 2 8 oz. cans of tomato sauce mixed with 1/2 c. water.

Combine uncooked Minute Rice with ground beef, egg, onion, salt, and 1/2 c. of tomato sauce mixture. Mix lightly, shape into 18 balls meatballs and place in skillet.

Pour remaining tomato sauce mixture over meatballs. Bring to a boil, reduce heat, and simmer covered for 15 minutes, basting occasionally.

Why is this a favorite of mine? It's quick, with few ingredients.
Why is this a favorite of the family's? I have four boys...they love ball-shaped entrees!

Hi Laura,
I would love to join you. I also raised 4 sons; they geow up and are all on their own now. But maybe I could join you and share some of my experiences. We didn't have computers and internet then; I assure you I often did feel alone. I have lots of recipes leftover from feeding my gang.
Did you just start this blog? it sounds great.

As one of those four boys, I must say that I LOVE PORCUPINE BALLS! They were a staple of my childhood and they are still a favorite of mine today!

Hi Laura, interesting recipe. Looks easy enough for me to try ... lol! I don't tend to cook something if it isn't relatively easy. What do you normally serve with these meatballs?

Mom of 3, this IS easy. Since it has meat and rice in it, I usually just serve corn or green beans with it. If they'll eat salad, that's nice, too. (When they were really small, I've been known to cut green beans up REALLY small and hide them in the porcupine balls...Sshhh.)

Porcupine Meatballs was a childhood favorite...I don't think I ever made them for my family... thanks for the idea!

Fun idea! I used to make porcupine meatballs but had forgotten all about them. I'll have to do them again.. I am getting excited to have more time to cook again, because i am going to retire in June!! Yay! (public school employee.. I'll miss it but will love my freedom, too.) The challenge is to find recipes that don't feed a million. There are only two of us left at home.

Later I'll join in and post a recipe.
